Come and enjoy a Gourment wandering hosted by head chef Lukáš Heuser from ORIGIN Lučenec at SEVEN Restaurant Café in Košice.
After more than twelve years in Switzerland, Lukáš Heuser returned to his hometown of Lučenec, where he and his wife Dominika set up the ORIGIN restaurant. The name itself encapsulates his approach to gastronomy. Respect for provenance, seasonality and ingredients, which he transforms into contemporary dishes using modern techniques.
His cuisine works with what is close to home, freshwater fish, venison, vegetables, fruit and fermentation – yet the result is not a return to tradition. It is a modern and bold take on the flavours we know.
Lukáš’s signature style has also earned recognition from gastronomic guides. Gault&Millau Slovakia awarded him the title ‘Chef of Tomorrow’, ORIGIN rated him 16/20 points, the Gurmán Award named him ‘Discovery of the Year 2024’, and in Switzerland he was a finalist in the Marmite Youngster 2023 competition.

Lukáš has shown that even Lučenec can become a destination that people travel to for its cuisine. Taste Košice intends to harness this same power of gastronomy to establish Košice as a destination that is not only worth visiting, but worth experiencing.
The tasting menu will be complemented by a non-alcoholic pairing, designed as an integral part of the evening, not just an alternative to wine. Fermentation, fruit acidity, herbs, smoky and roasted notes, and other natural flavours will create a perfect match for each course in the glass.
For one evening, therefore, ORIGIN will meet SEVEN.

Gabriel Kocák is one of the established figures of Slovak gastronomy, with a culinary signature rooted in nature, memory and the flavours of Slovakia.
His cuisine draws inspiration from the forest, the garden and ingredients we know well, transforming them through contemporary techniques, unexpected contrasts and a distinctive personal perspective. His cooking is not about recreating tradition. It is about remembering a flavour and discovering it again in a new form. Fire, smoke, forest notes, fruit, herbs and familiar ingredients become part of a modern gastronomic story – one that feels distinctly Slovak without relying on nostalgia.
Gabriel’s long-standing contribution to Slovak gastronomy has also earned significant recognition. He is a recipient of the Grand Prix Gurmán Award for Lifetime Achievement, has repeatedly ranked among Slovakia’s leading chefs and has represented Slovak gastronomy as part of the Slovak National Culinary Team, including at IKA Stuttgart 2024.

Bringing his culinary signature to SEVEN during Gourment Wandering therefore creates a natural connection between Slovak gastronomic identity and Košice as a destination worth experiencing through food.
The tasting menu will be complemented by cocktail pairings based on Slovak spirits, conceived as an integral part of the evening. Distillates, herbs, fruit, spices and other local flavours will continue the story from the plate into the glass – creating a pairing with a distinctly Slovak character.

Michelin-starred Matteo De Carli at SEVEN Košice | Taste Košice at VILLA SANDY
Matteo De Carli comes from northern Italy, but his professional journey has taken him through a number of world-renowned gastronomic destinations, eventually leading him to Prague, where he and his wife Lenka set up the Casa De Carli restaurant.
His cuisine draws on his Italian roots, relying on exceptional ingredients, purity of flavour and precision, whilst interpreting tradition in a modern way. It is precisely this signature style that has earned Casa De Carli one of the highest gastronomic honours, a single MICHELIN star. The current MICHELIN Guide ranks it amongst the five one-star restaurants in Prague and highlights its distinctive flavours with a gentle Northern Italian character.

During Taste Košice at VILLA SANDY, Michelin-starred cuisine from Prague will be coming to SEVEN. The fusion of Matteo’s Italian style with the SEVEN setting also reflects VILLA SANDY’s ambition to put Košice on the gastronomic map and bring world-class hospitality to the city.
An evening that will also serve as a celebration of Billecart-Salmon
However, this evening will be special for yet another reason.
Together, we will officially celebrate SEVEN Restaurant Café’s role as ambassador for Billecart-Salmon Champagne in Slovakia. Billecart-Salmon is one of the world’s most respected family-run Champagne houses, with a history dating back to 1818. SEVEN is now its exclusive ambassador in Slovakia.
